Method... Follow cooking instructions on rice packet. Rinse and drain well. Place vegetables in a large mixing bowl. Add all remaining ingredients including cooked rice to bowl and combine well. Use your hands to achieve a good consistency with rissoles. Shape into 12 patties. If time permits refrigerate rissoles for a few hours before cooking. Generously coat a large non-stick frypan with cooking spray, fry rissoles 3 to 5 minutes on each side or until cooked through and browned on both sides. VARIATIONS REPLACE BEEF MINCE WITH EITHER LEAN CHICKEN MINCE, LEAN LAMB MINCE OR LEAN PORK MINCE. |

Butter Chicken

You will need...
800g skinless chicken breasts
cooking spray
1 medium size onion diced
1 teaspoon crushed garlic (in jar)
½ teaspoon crushed ginger (in jar)
1 teaspoon cinnamon
1 teaspoon tumeric
1 teaspoon dried coriander
2 teaspoons paprika
½ teaspoon cumin
⅛ teaspoon chilli powder
2 teaspoons chicken stock powder
4 tablespoons no added salt tomato paste
1 tablespoon cornflour
1 x 375ml can evaporated light milk
Method...
Cut chicken into bite sized pieces. Coat a large non-stick frypan or wok with cooking spray, sauté chicken, onion, garlic and ginger until chicken pieces are nearly cooked. Add all the spices and stock powder. Combine with chicken for 1 minute. Add tomato paste and fold through chicken. Blend cornflour with milk then add to pan stir continuously, mixing well until boiled.
VARIATIONS
REPLACE CHICKEN WITH EITHER LEAN RUMP STEAK, BUTTERFLY PORK STEAK OR 600g TOFU.
Pizza Pasta Bake

You will need...
2 cups dried raw penne pasta
cooking spray
1 teaspoon crushed garlic (in jar)
1 cup green capsicum cut into strips
1 small onion sliced
2 cups mushrooms sliced
1 cup (125g) 97% fat free thick sliced ham (KR) cut into strips
1 x 415g can no added salt crushed tomatoes
1 x 420g can salt reduced tomato soup
2 tablespoons no added salt tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons grated parmesan cheese
1 1/2 cups 25% reduced fat grated tasty cheese
Method...
Preheat oven 180oC fan forced.
Follow cooking instructions on pasta packet, leave to one side. Coat a large non-stick frypan with cooking spray, saute garlic, capsicum and onion for 2 minutes. Add mushrooms and cook 2 minutes. Place all remaining ingredients into pan except for pasta and tasty cheese. Combine all ingredients well. Once boiled simmer for 3 minutes. Fold pasta and 1/2 cup tasty cheese into mixture. Pour mixture into a lasagne dish, level out then sprinkle remaining 1/2 cup tasty cheese over top. Bake 30-35 minutes uncovered. Serve with salad.
VARIATION
VEGETARIAN PIZZA PASTA BAKE, OMIT HAM AND REPLACE WITH 1 CUP SLICED CELERY.
Porcupine Casserole

You will need...
SAUCE
1 x 420g can salt reduced tomato soup
1 x 415g can no added salt crushed tomatoes
½ cup finely diced onion
1 cup water
2 teaspoons salt-reduced chicken-style stock powder( Massel®)
1 teaspoon dried oregano
1 teaspoon crushed garlic (in jar)
MEAT BALLS
500g very lean beef mince
⅓ cup raw long grain rice
1 teaspoon salt-reduced chicken-style stock powder (Massel®)
1 egg white
Method...
Pre heat oven to 190ºC fan forced.
To make sauce: In a large casserole dish (that has a lid) combine all ingredients listed to make the sauce. Pour into casserole dish and leave to one side.
To make meatballs: In a medium size mixing bowl combine all ingredients listed to make meat balls. Using your hands mix together well. Shape into 12 round meat balls, add to casserole dish and bake for 1 hour.
VARIATIONS:
REPLACE BEEF MINCE WITH 500g VERY LEAN CHICKEN MINCE
OR
REPLACE BEEF MINCE WITH 500g VERY LEAN PORK MINCE
Zucchini Slice

You will need...
2 packed cups(350g) grated zucchini
1/2 cup self raising flour
2 cups(250g) mixed vegetables: eg. grated
carrot, diced capsicum and celery
1 1/2 cups(110g) grated 25% reduced fat cheddar cheese
1/2 cup frozen peas
1/2 cup frozen corn kernels
2 whole eggs
3 egg whites
1 onion diced
1 cup(120g)diced lean ham
salt & pepper to taste
Method...
Preheat oven 180oC.
In a large Bowl add all ingredients except the cheese. Add T of cheese to mixture. Mix well. Coat quiche or lasagne dish with cooking spray. Spoon mixture into dish, then sprinkle remaining cheese on top. Bake 35-40 minutes or until golden brown.
This dish is even better if made the night before or left to sit for a few hours before serving.
VARIATIONS:
To make VEGETARIAN omit the ham - add one cup more of vegetables
or For an even lower fat count - replace 25% reduced fat cheese with 1 1/2 cups(150g)grated DEVONDALE 7 low fat cheese.
Savoury Impossible Pie

40g soft butter
4 eggs
2 cups of milk
1 cup of Cheese grated
1 diced onion
200g diced bacon
1 can of corn
Mix first 4 ingredients together then and all the other ingredients,
Pour into a greased dish, and bake for about 1 hour in moderate oven.
Sweet Impossible Pie

* 1 cup castor sugar
* 1 cup (90 gm) coconut
* 4 eggs, lightly beaten
* 2 teaspoon vanilla essence
* 125 gm butter, melted
* 2 cups milk
* Lightly grease a 24 cm pie dish.
* Sift flour into a bowl stir in sugar, coconut, eggs, vanilla, butter and milk.
* Pour this mixture into a greased pie dish.
* Bake for 45 minutes (or until lightly browned and set) in a moderate oven.
* Like the savoury version, will form its own base.
Home made Marshmallows
ReplyDelete1 1/2 cups caster sugar
2 tablespoons gelatine
1 teaspoon vanilla extract
2 cups desiccated coconut, cornflour or icing sugar to dust
Grease a 3cm deep, slab pan (they recommend 16.5cm x 26cm, but I just use a 20cm square slice tin). Line base and sides with baking paper, allowing a 2 cm overhang at 2 ends (this is to lift them out).
Combine sugar and 2/3 cup hot water in a saucepan over medium heat. Cook, stirring, for 3 minutes or until sugar dissolves and syrup is clear.
Using a fork combine gelatine and 2/3 cup cold water in a jug. Pour into hot syrup. Cook, stirring, for 2 to 3 minutes or until gelatine has dissolved and mixture is clear. Pour into the bowl of an electric mixer. Set aside to cool to room temperature (about 30 minutes).
Using an electric mixer, beat sugar and gelatine mixture on high for 6 to 10 minutes or until very thick. Add vanilla and beat for 1 minute. Spread into prepared pan. Smooth top. Set aside at room temperature, for 1 hour, or until set. Lift onto a board, using paper at either end.
Using a wet knife, cut marshmallows up into squares.
Place 1/2 cup at a time of icing sugar, cornflour or coconut into a snap lock bag, and gently toss marshmallows to coat. Remove to a wire rack. Set marshmallows aside until surfaces feel dry (about 1 hour).
Store in an airtight container for up to a week.
Basic Easy Muffin recipe
ReplyDelete2 cups self raising flour
1 cup sugar
1/2 cup oil or melted butter
1 x egg
1/2 cup milk
Mix all dry ingredients together then add the wet ingredients into the dry mix having already mixed the wet ingredients together.
Add all of the left over "yucky" fruit that you like, including half gnawed apples, I don’t even bother to peel them, just cut them into fine bits, left over cereal, porridge, raisins, currants, jam, coconut.
Whatever you have on hand.
I then add about half a teaspoon of sugar to the top of each muffin and bake for approximately 20 minutes at about 175 c.
They freeze beautifully
Impossible Lasagna!

1 cup plain flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon cooking margarine
Mix dry ingredients together, then process for 30 seconds in a food processor, or use a knife to cut the margarine into the mix. Store excess in the fridge.
This serves 8...
1/4 cup plus an extra 3 tablespoons creamed cottage cheese
3 tablespoons grated Parmesan
450gms mince (I'm going to use chicken mince), cooked and drained
1 cup shredded mozzarella cheese
1 teaspoon dried oregano
1/2 teaspoon dried basil
170gms tomato paste
240mls milk
2 large eggs
1/3 cup plus 4 extra tablespoons baking mix
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried garlic granules or 2 cloves garlic, crushed
Preheat oven to 200C. Layer cottage cheese and Parmesan in a greased 25cm pie plate.
Mix cooked mince, 1/4 cup plus 3 tablespoons mozzarella cheese, oregano, basil, and tomato paste in a bowl. Spread evenly over the cheese mixture in the pie dish.
Combine milk, eggs, baking mix, salt and pepper in a bowl. Beat until smooth and pour into plate.
Bake 30-35 minutes or until a knife inserted into the middle comes out clean. Sprinkle with remaining cheese. Cool for 5 minutes.
Use this one basic mix to make: scones, scrolls, pikelets, pancakes, waffles and quick breads! It will save you heaps of time and heaps more money!
ReplyDeleteSUPER BAKE-ANYTHING MIX:
In a large Tupperware container, mix:
2 kg packet SR flour
2 tbs + 1 tsp salt
1/3 cup + 1 tbs + 1 tsp sugar.
SCONES:
In bowl, add two cups baking mix. Rub in 2 tbs butter until mixture looks like breadcrumbs. Stir in 3/4 to 1 cup of milk, until moist but not too sticky. Don't overmix. Roll lightly and cut into shapes with biscuit cutter. Place on lightly floured baking sheet. Bake 10-12 minutes until golden.
SCROLLS:
Complete mixture as for scones. Roll out with rolling pin until 1 cm thick. Spread with softened butter, 1/2 cup brown sugar and a little cinnamon. Roll up tightly from long edge. Cut scrolls into 2 cm slices. Bake on baking tray 10-12 minutes.
Variations: Use your favourite jam or make pizza scrolls using tomato paste, ham & cheese.
PIKELETS/PANCAKES/WAFFLES:
To two cups of mix, add one egg, 1+ cups of milk, 1 tbs oil. Beat together until thick but slightly runny. Makes small pikelets, large pancakes or waffles.
QUICKBREAD:
Add 2 1/2 cups of baking mix. Stir until just moistened. Pour into a greased loaf pan. Bake 40-45 minutes.
Variation: BANANA BREAD: Mash two bananas, use only 3/4 cup milk. Add 1 tsp vanilla if desired. Very nice toasted!
Cake mix cookies
ReplyDelete1 cake mix (any kind, chocolate is our favorite)
1/2 cup choc chips (m&ms or whatever takes your fancy)
1/2 cup applesauce (or 1/4 cup of oil)
2 eggs
And a little water (you have to judge so the cookies look like cookie dough)
Directions:
Mix ingredients together and drop dough by spoonfuls onto ungreased baking sheet. Bake at 180 degrees for 10-15 minutes. Cool on wire racks
Tuna Pie

Two largish handfuls of cracker biscuits (like Jatz but home brand)
1 cup grated cheese
1 diced onion
1 cup milk
Couple of sprigs of parsley from the garden
3 eggs
Blend together (I used a hand mixer) and cook in a greased pie dish / container for 30 - 40 minutes at around 180 degrees.
WEETBIX SLICE

Cook Time: 15 mins
4 weetbix, crushed (about 75g)
1 tbs cocoa
1 cup flour
70g butter
½ cup coconut
½ cup sugar
¼ cup water
ICING
Icing sugar
Cocoa
milk
coconut
Mix all ingredients together well.
Press into greased/ lined tin.
Bake 180C for 15 minutes
Remove from oven stand in tin for 5 minutes before icing whilst still warm.
Sprinkle with coconut. Slice into squares.
